Yummm Bison!

I have been eating well, while it’s not 100% whole30 (damn that is hard) I’ve been doing well eating paleo.  Baby steps.

I made a fabulous salad for lunch yesterday with roasted garlic lemon lamb.

034Then last night I made ground bison with spaghetti squash, which turned out fabulous.

First I roasted the spaghetti squash in the oven for 30 minutes

164While that was happily roasting I sautéed onions and pepper

161once the onions were translucent I added the bison

162and I’m not lying when I say this stuff is so good!

once the bison was browned I added diced tomatoes

166and let it simmer, while that was simmering I took the spaghetti squash out of the oven and with a fork removed the middle from the squash and put it into a fry pan to cook out some of the liquid.

165I also added some seasoning to this, parsley, basil and Italian seasoning.

once most of the liquid is gone you can serve

167I put the squash on fist then added the bison on top

168all that’s left is to dig in.
