Simply Filling Eggplant Parmesan

I made eggplant parm last night with all simply filling ingredients which means it was 0 ppv for me!!

Turn your oven on to 425 peel and slice an eggplant.  Take a cookie sheet and spray with cooking spray place the eggplant on the sheet and season to taste.  I used garlic powder and Mrs Dash onion and herb.


Roast until golden, take a glass pan put a layer of tomato sauce then alternate with eggplant layers and sauce half way through put a layer of fat free mozzarella cheese then continue with eggplant and sauce.
Once done cover with tin foil and bake for 30 minutes.  Then uncover and continue to bake 5-10 minutes.

And serve!!

    Eggplant Parm is one of those perfect compromises between healthy and indulging! I love it! Thank you for this wonderful recipe!
