Recipe Vegi Pasta

Today I made Vegetable Pasta, and it came out great I wanted to share the recipe.  It calls for 4 servings but I put it in the recipe builder on Weight Watchers site as 5 servings since we are a family of 5 plus my son’s home health aide usually eats with us.  It came out to 9 points plus.

Boil 10 oz of egg noodles

While the water boils peel 4 carrots so they are in strips, once the egg noodles are almost done add the carrots for 1 minutes. 

In a small bowl combine 4 oz goat cheese with 1/3 cup of fat-free sour cream and 2 tbsp of flour, set aside.

In a skillet heat 4 scallions in one tsp olive oil.

  Add 1.5 cups of cauliflower and 2 cups of spinach.

  Heat until scallions and spinach are wilted.  Add 1 cup of peas and 1 tsp of tarragon.

Cook until heated through add the goat cheese mixture, and 3/4 cup of the pasta water, stir until mixed.  Then add cherry tomatoes and cook until slightly thickened.

You can plate the pasta and carrot mix

And Spoon the vegetable cheese mixture on top

This really came out great, my picky 11-year-old son even liked it.  It was really filling and easily fed 5 adult size portions.

 I got this recipe from a cookbook I checked out of the library, Meatless Main Dishes.  I love this book and will be doing more recipes from it.
